Grilled Halloumi Watermelon Bites

Grilled halloumi cheese has become a gourmet trend due to its higher melting point. We paired it with watermelon and mint for a refreshing summer appetizer!

Watermelon Bites with Grilled Halloumi

 seedless watermelon cut into 1 inch slices
1/2
virgin olive oil
2 tbsp
freshly ground black pepper
pinch
halloumi cheese, cut into 1/4 inch slices
1 package
fresh mint leaves, roughly torn
pinch
lemon juice

In a bowl combine the watermelon, olive oil, and black pepper. Set aside for at least 10 minutes.

Add 1 cup of water to drip tray to your Kenyon Grill; preheat grill to high heat.

Cut halloumi into 1/4 inch slices and pat dry with a paper towel.

Turn grill down to medium-high, and place halloumi slices on the grill. Grill for 1 to 2 minutes per side or until lightly charred.

Plate watermelon slices and and top with a mint leaf, place the grilled halloumi onto the watermelon and top with fresh lemon juice and more mint, serve immediately.
