Huevos Rancheros

Hearty and healthy, this Mexican breakfast will keep you fueled all morning long.

refried beans, warmed
1 cup
ripe avocado, halved, pitted, peeled and sliced

pico de gallo
1/2 cup
fresh cilantro leaves

lime wedges

Preheat Kenyon Grill with griddle to medium-high heat.

Brush griddle with oil. Crack eggs onto griddle and season with salt and pepper. Cook for 3 to 5 minutes or until egg whites are set and yolks are bright yellow and runny or until cooked as desired.

Meanwhile, cook tortillas on griddle for 1 to 2 minutes per side or until lightly crisped.

Smear refried beans over each tortilla. Top with fried egg, avocado slices and drizzle of pico de gallo. Garnish with cilantro and serve with lime wedges.

TIP

Top huevos rancheros with crumbled queso fresco or feta cheese if desired.
