swordfish steaks (about 6 ounces each and 1 inch thick)

salt and freshly ground black pepper

lemons (1 for juice and 1 for garnish)

Add 2-3 cups of water to the drip tray of your Kenyon Grill. Preheat the grill to medium-high heat.

Prepare the Marinade:In a small bowl, combine olive oil, the juice of one lemon, and minced garlic. Whisk together to blend. Season the marinade with salt and pepper.

Brush the swordfish steaks on both sides with the marinade. Let them sit for about 15 to 20 minutes at room temperature to allow the flavors to meld.

Place the swordfish steaks on the hot grill. Grill for about 4 to 5 minutes on each side or until the fish is opaque and slightly firm to the touch. Be careful not to overcook as swordfish can dry out quickly.

Remove the swordfish from the grill and place on a serving platter. Cut the remaining lemon into wedges and serve alongside the fish for squeezing over.
