Grilled Sweet Potato Rounds

Delicious! These grilled sweet potato rounds are the perfect side dish for any season.

sweet potatoes, sliced into 1/4-in.-thick rounds
2 lbs
olive oil
2 tbsp
Kosher salt
to taste
fresh cracked black pepper 
to taste

Relish

small red onion, finely chopped
1/2
grated lemon zest plus 1/4 cup juice
2 tsp
olive oil, divided, plus more for serving
3 tbsp
fresno chile, seeded and finely chopped
1 small
fresh mint, chopped
1/4 cup
Plain Greek yogurt
1 cup

Preheat your Kenyon Grill to medium-high and add 1 cup of liquid to the drip tray.

Place sliced sweet potatoes into bowl and combine with olive oil and salt and pepper.

Lower heat to medium. Place potatoes on the grill and cook for about 10 minutes on each side or until soft when pierced.

In a bowl, combine onions, lemon zest, chile, and remaining tablespoon oil, then stir in mint. Makes 1/2 cup relish.

Spread Greek yogurt onto a platter. Arrange sweet potatoes over yogurt and spoon relish on top. Enjoy!
