Salad

flank steak

1 1/4 lb

peaches, pitted and cut into 1/2-inch wedges

fresh arugula

8 cups

goat cheese

1/3 cup

balsamic vinaigrette dressing (store bought)

1 bottle

Marinade

balsamic vinegar

1/2 cup

light-brown sugar

2 tbsp

garlic cloves, minced

crushed dried rosemary

1 tsp

coarse salt and ground pepper

to taste

In a large resealable plastic bag or baking dish, combine steak, vinegar, garlic and brown sugar. Marinate 20 minutes at room temperature.

Add 2 cups of liquid to drip tray of grill. Preheat grill for 5 to 9 minutes on high. Remove steak from marinate, coat with vegetable oil, and season generously with salt and pepper.

Cover and grill for 6 to 8 minutes per side for medium-rare or until cooked as desired. Let stand for 10 minutes; slice thinly.

Meanwhile, grill peach slices for 2 to 3 minutes per side or until well marked; set aside.

Arrange salad: In a large serving bowl, add arugula, feta, peaches, and steak. Drizzle with dressing and gently toss.
