ripe plantains (they should be yellow with black spots)

olive oil or melted butter
2 tbsp
salt
to taste
fresh cilantro, lime wedges
optional for garnish

Add 2-3 cups of water to the drip tray of your Kenyon Grill. Preheat the grill to medium-high heat.

Peel the plantains and cut them into diagonal slices about 1/2 inch thick. In a small bowl, mix the olive oil or melted butter with a pinch of salt. Brush each plantain slice with the oil or butter mixture on both sides.

Place the plantain slices on the grill. Grill for about 2-3 minutes on each side or until they are golden brown and have grill marks. Be careful as they cook quickly; keep an eye on them to prevent burning.

Remove the plantains from the grill and transfer to a serving plate. Optionally, sprinkle with a little more salt and garnish with chopped fresh cilantro. Serve with lime wedges on the side for a zesty flavor.
