Grilled Haddock with Spiced Potatoes and Green Beans

Grilled Spiced Potatoes

Yukon Gold potatoes, cut into 1/2-inch thick slices
1 lb
chili powder
1 tsp
smoked paprika
1/2 tsp
ground coriander
1/2 tsp
granulated garlic
1/4 tsp
salt
1/2 tsp
black pepper
1/2 tsp
olive oil
1 tbsp

Grilled French Green Beans

French green beans, trimmed
1/2 lb
olive oil
1 tbsp
grainy mustard
2 tsp
garlic, minced
1 clove
salt and pepper
pinch
chopped almonds
1/4 cup

Grilled Lemon and Caper Haddock

haddock fillets (5 to 6 oz each)

olive oil, divided
2 tbsp
salt and pepper
pinch
lemon zest
1 tsp
lemon juice
1 tbsp
capers
1/4 cup
finely chopped fresh parsley

Grilled Spiced Potatoes: In large bowl, combine chili powder, smoked paprika, coriander, garlic, salt and pepper. Add potatoes and olive oil; toss until potatoes are well coated.

Add 1 cup water to drip tray of Kenyon City Grill. Preheat grill to high heat.

Arrange potato slices on grill in one layer. Cover and grill for 10 to 12 minutes per side or until well marked and tender.

Grilled French Green Beans: Meanwhile, grill green beans for 3 to 5 minutes per side or until grill marked and tender. Transfer to large bowl; toss with olive oil, mustard, garlic, salt and pepper. Garnish with almonds.

Grilled Lemon and Caper Haddock: Pat fish dry with paper towel. Brush with 1 tbsp olive oil; season with salt and pepper. Grill for 2 to 3 minutes per side or until fish just starts to flake when tested.

Transfer fish to serving plate. Drizzle with remaining olive oil and lemon juice. Sprinkle with lemon zest, capers and parsley. Serve with potatoes and green beans.

TIP

Substitute halibut for haddock, increasing grilling time as needed.

TIP

Substitute regular green beans for French green beans, increasing grilling time as needed. Toss with halved grape tomatoes for a pop of color if desired.
