Turn your favorite appetizer into a healthy meal with this quick and easy grilled Caprese chicken recipe made from fresh ingredients.


Balsamic Vinegar
6 Boneless Skinless Chicken Breast Halves
2 Tbsp Olive Oil
1 Clove Fresh, Minced Garlic
Salt and Ground Pepper
8 oz Fresh Sliced Mozzarella
2 Large Sliced Roma Tomatoes
1/4 Cup Chopped Basil


Pre-heat your Kenyon All Seasons Grill to a medium-high heat. In a small bowl, combine olive oil and fresh garlic. Coat each side of the chicken breast lightly with the mixture and season with salt and ground pepper.

Place chicken on grill and close the lid. Let cook for 5 minutes on each side, depending upon the thickness of the chicken breasts cooking times may vary.

Add a slice of fresh mozzarella, a slice of tomato and a dash of  basil to the top of the chicken breast. Close the grill lid and cook for an additional 1-2 minutes to allow the flavors to melt together.

Remove from the grill, plate and top off with a drizzle of balsamic vinegar. Serve and enjoy!
