1
Add the chicken to a large mixing bowl.
2
Add the Greek yogurt, olive oil, lime juice, garlic, paprika, garlic powder, salt, and pepper.
3
Mix well until every piece of chicken is evenly coated.
4
Cover and refrigerate for at least 2 hours, or overnight for the best flavor.
5
Preheat your Kenyon grill to Medium-High.
6
Thread the marinated chicken onto metal or soaked wooden skewers.
7
Place the pita on the preheated grill and cook for about 1 minute per side until warm with light grill marks. Remove and keep warm.
8
Place the chicken skewers on the grill.
9
Cook for 10-14 minutes, turning every few minutes until the chicken is lightly charred and reaches an internal temperature of 165°F.
10
Serve the chicken skewers with warm grilled pita, garlic yogurt sauce (or toum), fresh herbs, and lime wedges.

TIP

Marinating overnight develops even deeper flavor and keeps the chicken incredibly tender.

TIP

Don't overcrowd the skewers—leave a little space between each piece so they cook evenly.

TIP

A meat thermometer is the easiest way to guarantee perfectly cooked chicken.

TIP

Freshly grilled pita makes an excellent wrap for leftover chicken.
