Greek Chicken Skewers with Homemade Tzatziki

Greek Chicken Skewers

chicken breast, cut into cubes
2 lbs
bell peppers, chopped into large pieces

red onion, cut into chunks

Wooden or metal skewers

Homemade Tzatziki Sauce

plain Greek yogurt
1 cup
cucumber, grated and water squeezed out
1/2
fresh dill, chopped
1 tbsp
olive oil
1 tbsp
fresh lemon juice
1 tbsp
Salt and pepper
to taste

In a large bowl, whisk together olive oil, lemon juice, and Zeus’s Zest seasoning.

Add cubed chicken and toss until fully coated. Cover and marinate for at least 30 minutes.

Thread the chicken onto skewers, alternating with bell peppers and red onion.

Add 2–3 cups of water to the drip tray and preheat your Kenyon grill to high heat.

Grill skewers on high heat until lightly charred and juicy, turning occasionally.

Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F.

Homemade Tzatziki Sauce: In a bowl, combine Greek yogurt, grated cucumber, dill, olive oil, and lemon juice. Season with salt and pepper to taste. Chill until ready to serve alongside the chicken skewers.

Grill a lemon cut-side down until lightly caramelized for a smoky citrus twist on a classic gimlet.

Mix:
-2 oz gin
-1 oz grilled lemon juice
-1/2 oz simple syrup
-Shake with ice, pour over fresh ice, and enjoy with your Greek chicken skewers.
