Trim 1/4 inch off 2 opposite long sides of each eggplant. Cut each eggplant lengthwise (in same direction as trimmed sides so each slick as skin just round edge) into slices.
Brush eggplant with olive oil and salt and pepper to taste.
Preheat All Seasons™ Grill to medium high heat (6 bars).
Place eggplant on grill for 6 minutes turning over once, until tender.
Layer a casserole dish with grilled eggplant with layer of sauce and cheese in between.
Place in over at 425 degrees for 20 minutes.
Remove and enjoy!

2 tsp extra virgin olive oil
sea salt (to taste)
black pepper (to taste)
Your favorite sauce (to liking)
1/2 cup grated parmigiana cheese
